Chunks can be used both dry and damp. When used dry, the temperature in your BBQ remains stable and the Chunks provide a subtle smoky flavor. Dry use results in immediate smoke development. If you choose to soak the Chunks first, the smoky flavor will be more intense. This is accompanied by a drop in the temperature in your BBQ and the formation of steam. Chunks are also suitable for use in a gas barbecue; place them in a metal box.
