The round dome not only gives the DOME a robust appearance, it also ensures optimal air circulation. First you heat the stone by lighting a fire on it. Then you place burning wood at the back of the oven on the side, the hot air rises and goes via the dome to the flue. This way, the heat circulates above your dish, allowing it to bake optimally. The ceramic pizza stone also retains its heat well. The DOME therefore has all the ingredients for a delicious pizza.
