In this article, we share handy tips and tricks that you can put into practice immediately.
One of the most important steps is preheating. Always take your time with this: a stone needs to heat up for at least 15 to 20 minutes before you slide the first pizza into the oven. This ensures that the crust becomes crispy and the heat is evenly distributed. Preferably use an infrared thermometer to measure the temperature of the stone. For pizzas, a temperature of 400–450 °C is ideal.
Depending on your model, you use gas, wood, or a combination of both.
- Dual Fuel ovens like the Gozney Dome give you flexibility: light it quickly on gas and then add wood for the authentic flavor.
- Wood-fired models work best with dry, clean hardwood or charcoal. Avoid damp wood or softwoods, which cause unruly flames and excessive smoke.
With pizzas, it's all about speed and timing. Always slide your pizza onto the stone with a pizza peel and turn it halfway through the baking time for even cooking. Use thinly topped bases so they don't get soggy.
Do you want to prepare low & slow dishes such as pulled pork or spareribs? Then set the oven to indirect heat and use the door or heat shield to temper the heat. This way, the meat remains tender and juicy.
The Gozney's vents are your best friend. With a small opening, you keep the temperature low and constant, while a larger opening allows for more oxygen and therefore higher heat. Think of it as the accelerator and the brake of your oven. Experiment with small adjustments: even a quarter turn can make a big difference.
A Gozney oven will last for years provided you maintain it properly. Only remove ash residue when the oven has completely cooled down and brush the stone clean with a special pizza brush. A damp cloth is sufficient for the exterior; preferably do not use aggressive cleaning agents.
Is your oven located outdoors? Then always cover it with a breathable protective cover and ensure the ventilation openings are slightly open. This will prevent moisture and mold.
