PitmasterX cast iron skillets combine traditional cast iron with a hand-polished cooking surface. The skillets were developed in collaboration with The Windmill and are distinguished by their special finish. Where a traditional cast iron frying pan often has a rough interior, the cooking surface of the PitmasterX is hand-polished. The result is a remarkably smooth pan that combines the heat retention of cast iron with a pleasant cooking experience. At BBQ Valley, you will find two versions of this 12-inch skillet, suitable for use in the kitchen and for outdoor cooking.
A regular cast iron skillet often has a grainy texture that develops during the casting process. The PitmasterX Hand Polished Skillet's cooking surface has been specially treated and hand-polished to a smooth finish. This allows you to comfortably move a spatula across the bottom and makes the surface easier to clean. With proper use and maintenance, a natural protective cooking layer develops, which enhances the non-stick properties. The pan does not require a synthetic non-stick coating for this and is free of PFAS coating.
A smooth cooking surface does not mean that everything will release easily. Even with PitmasterX, good temperature control, sufficient cooking fat, and maintaining the natural cooking layer remain important. It is precisely the combination of material, finish, and careful use that makes these skillets interesting for enthusiastic home cooks and BBQ lovers.
The PitmasterX hand-polished skillets are available in two versions. Both have a diameter of 12 inches (30 cm) , a cooking surface of approximately 25 cm, and a height of 5 cm. The main difference lies in the handles and the space the pan occupies during use.
PitmasterX X001 – skillet with long handle. This version has a classic long handle and an extra grip on the opposite side. This makes the pan pleasant for those who like to work with a traditional cast iron frying pan. The total length is approximately 48 cm. When using in a closed kamado or oven, always check whether there is sufficient space.
PitmasterX X002 – skillet with two handles. This version has two short integrated handles instead of a long handle. This can be more practical when you want to place the pan in an oven or kamado and have limited space. With two heat-resistant gloves, you can firmly grip the skillet on both sides. Please note that the handles will become very hot during cooking.
Cast iron absorbs a lot of heat and retains it for a long time. This makes a PitmasterX skillet particularly suitable for searing steaks, ribeye, sirloin, bavette, and smash burgers. You can also prepare potatoes, mushrooms, vegetables, eggs, and oven dishes in this pan. Gradually preheat the cast iron and allow a steak or burger enough time to develop a nice crust before flipping it.
From kamado barbecue to induction. The PitmasterX skillets are suitable for various heat sources, including gas, induction, electric and ceramic hobs, the oven, a suitable BBQ and open fire. On a kamado, you can use the pan for direct frying or to prepare a dish with indirect heat. When choosing between X001 and X002, pay particular attention to the available space and how you want to use the pan.
PitmasterX uses cast iron without a synthetic non-stick coating. The smooth interior is the result of manual polishing, not a plastic coating. With regular use and proper maintenance, a natural seasoning layer can form and develop further. This makes this skillet interesting for those who consciously choose a cast iron frying pan without a PFAS coating and are willing to maintain the cast iron well.
Proper maintenance helps to keep the hand-polished cooking surface in good condition. After use, allow the pan to cool down first and remove any leftover cooking residue with warm water and a suitable brush or sponge. If necessary, you can use a small amount of mild dish soap. Immediately dry the skillet carefully and apply a thin layer of suitable oil to maintain the natural protective layer. Do not leave the pan in water for extended periods and do not use a dishwasher.
If you want to use the skillet on an induction or glass cooktop, lift the pan when you want to move it to help prevent scratches on the cooktop. Always follow the manufacturer's maintenance instructions before first use and for re-seasoning.
At BBQ Valley, you'll find the PitmasterX Hand Polished Skillet X001 and X002 . Both versions offer the heat retention of cast iron and a remarkably smooth, hand-polished cooking surface. Which version best suits you primarily depends on your preference for a long handle or two short handles and the available space on your BBQ.
In our showroom in Venlo, we are happy to advise you on cast iron pans, maintaining the natural cooking surface, and using them on a Kamado barbecue. This way, you can choose the PitmasterX skillet that suits your cooking style.
