With indirect heat cooking, place a heat shield between your grill and the burning coals. This allows you to avoid direct heat from the coals on your ingredients, prevent flames from oil or fat, and use your Kamado as a kind of oven. Although you retain the BBQ flavour, you cook in a closed environment, which is ideal for a variety of dishes, from pizza to pulled pork, at both high and low temperatures.
The high temperatures burn away most residue. Brush the stone clean and remove ash after use. The protective cover will keep the oven looking good longer. Gozney offers a 5-year warranty upon registration.
Soot deposits are easily removed with The Pink Stuff paste. Apply a small amount to a soft cloth or sponge, rub away the deposits, and rinse with water. This will keep the exterior of your Gozney Dome clean and smooth.
