The further south, the sweeter mustard-based barbecue sauces in the Carolinas are.
In the north, mustard sauce is traditionally more sour in taste and thinner in texture. This is because the English introduced mustard and vinegar here long ago, which gives this sauce its unique character. In the south, the sauce was in turn influenced by the French, who added some sugar to the sauce in addition to mustard. Our own Carolina Style Mustard is inspired by this latest Southern variant. With longer cooking time, the sharp taste of mustard gradually decreases and becomes increasingly sweet, until it is perfectly balanced.

It is also recommended with pork chops and barbecue sauce, but is also suitable for experimenting with other meats such as chicken or pulled pork.
