NoRubbish rubs can be applied to thin cuts of meat a few minutes before grilling or barbecuing. For thicker cuts, however, the best flavor comes out when the rub is applied at least a few hours in advance. Let the dish rest, covered, in the refrigerator. Recommended time: 6 hours.
Sprinkle or rub the rub on and grill over indirect heat. While grilling or baking, keep an eye out for charring or scorching. Move the meat to a cooler spot or turn the oven down if it looks like it might burn.
